Salt and Pepper Food Truck Brings Birria Nachos to Cantrell Road for National Nacho Day
If you are looking for an excuse to load up on chips and queso, Friday brought the right calendar alignment. KATV reported that Foodie Friday landed directly on National Nacho Day, sending local diners on a search for the highest-rated plates in Little Rock, Arkansas. After some hard research into local favorites, the spotlight landed squarely on the Salt and Pepper food truck, parked permanently off Cantrell Road in Central Arkansas.
“I always wanted to have my own business,” Padilla told KATV. “I always been cooking more over than 25 years’ experience, so I decided to jump and start my own business.”
A Menu Built on Birria and Signature Tacos
While the calendar highlighted nachos, the Salt and Pepper menu stretches far beyond traditional chips and melted cheese. Padilla serves a wide array of street food staples, featuring birria tacos, loaded fries, and classic quesadillas alongside specialized nacho platters.
“I do have birria tacos. I have lots of fries. I have nachos, birria nachos, shrimp nachos. I have my salt and pepper signature tacos, and also I have quesadillas, old type of quesadillas, and of course nachos,” Padilla explained to KATV.
The origin of the truck’s name stems from a simple kitchen habit that Padilla kept in mind for years before launching his mobile venture. “I have that name for years in my head,” he said. “And at the end, it’s just to pour salt and pepper over the food when I’m cooking it.” Among the diverse offerings, his queso birria stands out as a primary crowd-pleaser for regular customers stopping by the lot near Georgia Avenue.
Padilla Parks Salt and Pepper Truck at Local Events
Beyond his daily spot on Cantrell Road, Padilla has established the Salt and Pepper truck as a regular fixture at Central Arkansas community gatherings, making appearances at local food truck festivals, county events, and the annual Pride festival. For Padilla, the interaction remains the best part of the operation.

“My favorite part is meeting a lot of people and finding out, finding out what the most people like the food, and I like the review, the feedback, so I can learn more and bring more flavors to the to the community,” Padilla told KATV.
